A Taste of wonderful local cheeses, from Lyburn Farm in The New Forest, The Book & Bucket Cheese Company, Dorset and The Isle of Wight Cheese Co. We have paired these with some of the best Charcuterie we have ever tasted made from meat sourced from local farms - including Pigs who have been roaming The New Forest in Autumn for acorns (famously known as Pannage Pork). This is then cured in Himalayan Salt Chambers for many, many months.
